Bison Medallions

    Season the Bison

    Sprinkle the bison medallions evenly with salt and black pepper on both sides.

    Sear the Bison

    In a skillet, heat the olive oil over medium-high heat. Once hot, add the bison medallions and sear for about 3-4 minutes on each side, or until they reach your desired level of doneness. Remove from the skillet and let rest.

Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into evenly sized chunks. Place them in a pot of salted water and bring to a boil.

    Cook the Potatoes

    Cook the potatoes for about 15-20 minutes, or until fork-tender. Drain well.

    Mash the Potatoes

    In the same pot, add the minced garlic, butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasonings as needed.

Sage Butter Pan Sauce

    Make the Sauce

    In the same skillet used for the bison, melt the butter over medium heat. Add the chopped sage and minced garlic, sautéing for about 1 minute until fragrant.

    Pour in the chicken broth and bring to a simmer, scraping the bottom of the skillet to deglaze. Season with salt and pepper to taste, and let simmer for 2-3 minutes.
