Salad Base

Cilantro Lime Vinaigrette

Method

Prepare the Steak

  1. 1

    Marinate the Steak

In a bowl, combine the soy sauce, minced garlic, and flank steak. Let it marinate for at least 30 minutes.

  2. 2

    Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from marinade and grill for about 5-7 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Prepare the Fried Bleu Cheese Crisp

  1. 3

    Make the Cheese Crisp

In a bowl, mix the crumbled bleu cheese with flour. Form small rounds and set aside.

  2. 4

    Fry the Cheese Rounds

In a skillet, heat oil over medium heat. Fry the cheese rounds until golden and crispy, about 2-3 minutes on each side. Drain on paper towels.

Prepare the Salad

  1. 5

    Make the Vinaigrette

In a blender, combine chopped cilantro, lime juice, olive oil, honey, salt, and black pepper. Blend until smooth.

  2. 6

    Assemble the Salad

In a large bowl, toss the mixed salad greens, sliced red onion, diced avocado, and segments of grapefruit. Drizzle with the cilantro lime vinaigrette and toss to coat.

Final Assembly

  1. 7

    Plate the Dish

On a plate, arrange the salad mixture, top with sliced steak, sprinkle with chopped candied almonds, and garnish with the fried bleu cheese crisp.
