    Season the Sirloin

    Pat the 10 oz. center-cut sirloin dry with paper towels. In a small bowl, mix together salt, black pepper, garlic powder, and onion powder. Rub the spice mixture all over the sirloin to evenly coat the meat.

    Preheat the Grill or Pan

    Heat a grill or a cast-iron skillet over medium-high heat. If using a skillet, add olive oil and let it heat until shimmering.

    Cook the Sirloin

    Place the seasoned sirloin onto the hot grill or skillet. Cook for about 4-5 minutes on one side without moving it, allowing a nice sear to form. Flip the sirloin and cook for an additional 4-5 minutes for medium-rare, or adjust the time based on your desired doneness.

    Rest the Meat

    Once cooked to your liking, remove the sirloin from the heat and let it rest on a cutting board for about 5 minutes. This allows the juices to redistribute throughout the meat.
