Cut the boneless, skinless chicken breasts into bite-sized pieces.

Chop the bell pepper and onion into medium-sized pieces.

Prepare the Pineapple
If using fresh pineapple, peel and chop it into chunks. If using canned, drain the chunks.

Mix the Sauce
In a bowl, combine the soy sauce, rice vinegar, brown sugar, ketchup, cornstarch, water, minced garlic, and minced ginger. Whisk until smooth and set aside.

Cook the Chicken
In a large skillet or wok over medium-high heat, add a small amount of oil. Once hot, add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Return the cooked chicken to the skillet with the vegetables. Add the pineapple chunks and the prepared sauce. Stir to combine.
