Method

Preparing the Custard Base

  1. 1

    Combine Ingredients

In a medium saucepan, whisk together the heavy cream, whole milk, and granulated sugar over medium heat until the sugar dissolves.

  2. 2

    Heat the Mixture

Continue heating the mixture until it is hot but not boiling. Remove from heat.

  3. 3

    Whisk Egg Yolks

In a separate bowl, whisk the egg yolks until they are light and frothy.

  4. 4

    Temper the Egg Yolks

Slowly pour about half of the hot cream mixture into the egg yolks, whisking constantly to temper them.

  5. 5

    Combine and Cook

Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over medium-low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

Flavoring and Chilling

  1. 6

    Add Flavorings

Once thickened, remove from heat and stir in the matcha green tea powder, vanilla extract, and a pinch of salt until fully combined.

  2. 7

    Chill the Mixture

Transfer the custard base to a bowl and cover it with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours or overnight until completely chilled.

Churning and Freezing

  1. 8

    Churn the Ice Cream

Once the custard is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  2. 9

    Freeze the Ice Cream

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
