Preparation of Filling

Prepare the Vegetables
Julienne the carrot, cucumber, and red bell pepper. Shred the red cabbage, chop the cilantro and green onions, and slice the avocado. Set aside.
Making the Dipping Sauce

Combine Sauce Ingredients
In a small bowl, combine soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and grated ginger. Mix well and add chili flakes if desired. Set aside.
Assembling the Spring Rolls

Soak the Rice Paper
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable.

Fill the Wrapper
Lay the soaked rice paper on a clean surface. Place a small amount of the prepared vegetables (about 2 tablespoons) in the center of the wrapper. Be careful not to overfill.

Roll the Spring Roll
Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly from the bottom to the top. Repeat with the remaining wrappers and filling.
Serving

Serve the Spring Rolls
Arrange the spring rolls on a platter and serve with the dipping sauce on the side. Enjoy your crispy, fresh spring rolls!
