Method
Preparing the Rice
- 1
Rinse the Rice
Rinse 1 cup of glutinous rice under cold water until the water runs clear to remove excess starch.
- 2
Soak the Rice
Soak the rinsed rice in water for at least 4 hours or overnight for the best results.
- 3
Steam the Rice
Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam over simmering water for about 30 minutes until the rice is tender and sticky.
Making the Coconut Sauce
- 4
Combine Ingredients
In a small saucepan, combine 1 cup of coconut milk, 1 tablespoon of sugar, and 1 teaspoon of salt.
- 5
Heat the Sauce
Heat the mixture over medium heat, stirring until the sugar dissolves. Do not let it boil.
- 6
Mix with Rice
Once the rice is cooked, transfer it to a bowl and pour about 3/4 of the coconut sauce over it. Mix well and let it sit for about 30 minutes to absorb the flavors.
Preparing the Mango
- 7
Peel and Slice
Peel the ripe mangoes and slice them into thin strips or wedges.
Serving
- 8
Plate the Dish
To serve, place a portion of the coconut sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut sauce.
- 9
Garnish
Sprinkle sesame seeds or mung beans on top for added texture and flavor.
