Method
Prepare the Fish
- 1
Marinate the Fish
In a medium bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the fish fillets and coat them well in the marinade. Cover and refrigerate for at least 20 minutes.
- 2
Cook the Fish
Preheat a grill or a non-stick skillet over medium-high heat. Remove the fish from the marinade and cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily. Remove from heat and set aside.
Prepare the Cabbage Slaw
- 3
Mix the Slaw Ingredients
In a large bowl, combine the shredded cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well to combine and let it sit for about 10 minutes to allow the flavors to meld.
Prepare the Chipotle Mayo
- 4
Combine Ingredients
In a small bowl, mix together the mayonnaise, minced chipotle peppers, and lime juice until smooth. Adjust seasoning to taste.
Assemble Tacos
- 5
Warm the Tortillas
Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.
- 6
Build the Tacos
Place a few pieces of cooked fish on each tortilla, top with the cabbage slaw, and drizzle with chipotle mayo. Serve immediately with lime wedges on the side.
