Crust Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Form the Crust

    Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust.

    Bake the Crust

    Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from oven and let it cool.

Filling Preparation

    Mix Filling Ingredients

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in granulated sugar and mix until well combined.

    Add Vanilla and Sour Cream

    Add vanilla extract and sour cream to the cream cheese mixture, mixing until smooth.

    Incorporate Eggs

    Add eggs one at a time, mixing on low speed until just combined. Be careful not to over-mix.

    Pour Filling into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes or until the center is set and the edges are lightly browned.

    Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour. Then transfer to the refrigerator to chill for at least 4 hours, preferably overnight.

Topping Preparation

    In a medium bowl, combine the sliced strawberries with granulated sugar and lemon juice. Toss gently to coat the strawberries.

    Let Strawberries Marinate

    Let the strawberries sit for about 15-20 minutes to allow them to release their juices.

    Top the Cheesecake

    Once the cheesecake is chilled, remove it from the springform pan and top with the marinated strawberries before serving.
