Prepare the Potatoes
Start by washing and peeling the Russet potatoes. Cut them into even strips, about 1/4 inch thick. This ensures they cook evenly.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry for about 5-7 minutes or until they are golden brown and crispy. Make sure not to overcrowd the pot.

Drain the Fries
Once the fries are golden brown, use a slotted spoon to remove them from the oil and transfer them to a paper towel-lined plate to drain excess oil.

While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika to taste. Toss gently to ensure they are evenly coated.
