For the Chicken Fried Steak

    Prepare the Meat

    Season the cubed steak with salt, black pepper, and paprika on both sides.

    Make the Breading

    In a bowl, whisk together the eggs and milk. In another shallow dish, place 1 cup of all-purpose flour.

    Bread the Steak

    Dredge each piece of seasoned steak first in the flour, then dip into the egg mixture, and finally coat with flour again. Set aside.

    Fry the Steak

    Heat 1 cup of vegetable oil in a skillet over medium-high heat. Once hot, fry the breaded steaks for 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

For the Gravy

    Make the Roux

    Using the same skillet, reduce heat to medium and add 4 tablespoons of flour to the remaining oil. Stir constantly for about 2 minutes until the flour is lightly browned.

    Gradually whisk in 2 cups of milk to the roux, stirring continuously to avoid lumps.

    Add salt and black pepper to taste. Continue to cook and stir until the gravy thickens, about 5-7 minutes.

    In a separate skillet, melt 2 tablespoons of butter over medium heat.
