Method

Grilling the Salmon

Prepare the Marinade

In a small bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Coat the salmon fillets with the mixture.

Grill the Salmon

Preheat the grill to medium-high heat. Place the salmon on the grill and cook for about 5-6 minutes per side, or until the salmon flakes easily with a fork.

Making the Risotto

Sauté the Onion and Garlic

In a large saucepan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

Cook the Rice

Add the Arborio rice to the pan and stir for about 2 minutes until the rice is slightly toasted. Gradually add the chicken broth, one ladle at a time, stirring frequently until the liquid is absorbed.

Finish the Risotto

Once the rice is creamy and al dente, stir in the heavy cream, Parmesan cheese, fresh thyme, lemon zest, and season with salt and black pepper to taste.

Prepare the Asparagus

Toss the trimmed asparagus with olive oil, salt, and black pepper.

Place asparagus on the grill and cook for about 4-5 minutes, turning occasionally until tender and slightly charred.
