Preparation Instructions
Cook the Bacon
In a skillet over medium heat, cook the chile-pepper bacon until crispy. Remove and set aside on paper towels to drain.
Prepare the Burger Patties
In a large bowl, gently combine the Angus ground beef with salt and pepper. Form into 4 equal-sized patties.
Cook the Burgers
In the same skillet used for the bacon, cook the burger patties over medium-high heat for about 4-5 minutes per side for medium doneness, or until desired doneness is reached.
Add Bleu Cheese
In the last minute of cooking, sprinkle the bleu cheese crumbles on top of each patty and cover to melt the cheese.
Toast the Buns
While the cheese is melting, toast the burger buns in the skillet until golden brown.
Assemble the Burgers
On the bottom bun, layer with lettuce, a slice of tomato, the burger patty with melted bleu cheese, crispy bacon, crispy fried onions, and house-made pickles. Top with the other half of the bun.
Serve
Serve the burgers hot with additional pickles and your favorite sides.
