1. Caramelize the Onions

In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and salt, cooking until they are soft and caramelized, about 15 minutes. Stir in the whiskey and cook for an additional 2-3 minutes. Remove from heat and set aside.

2. Cook the Bacon

In the same skillet, cook the bacon strips until crispy. Remove and place on paper towels to drain excess fat.

3. Cook the Burgers

In the same skillet, use the remaining butter and increase the heat to medium-high. Season the Angus beef patties with black pepper and cook for about 4-5 minutes on each side or until cooked to your desired doneness.

4. Assemble the Melt

Spread a layer of Irish pimento cheese on two slices of marble rye bread. Top with the cooked Angus burger, caramelized onions, and crispy bacon. Place the other slices of bread on top.

5. Grill the Sandwich

Heat the skillet over medium heat. Grill the sandwiches on both sides until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

6. Serve

Remove from skillet, slice in half, and serve warm.
