Fry the Chips

In a large skillet or deep fryer, heat oil over medium-high heat. Fry the potato chips in batches until golden brown and crispy. Remove and drain on paper towels. Season with salt and pepper.

Make Irish Cheddar Sauce

In a saucepan, combine heavy cream and shredded Irish Cheddar cheese over low heat. Stir until melted and smooth. Season with salt and pepper to taste.

Cook the Bacon

In a skillet, cook the bacon until crispy. Remove and let cool, then crumble into small pieces.

Prepare the Toppings

Chop the onion, chives, and cilantro. Halve the heirloom grape tomatoes.

Assemble the Nachos

On a large serving platter, layer the fried potato chips. Pour the Irish Cheddar sauce over the chips, then top with crumbled bacon, chopped onions, chives, heirloom grape tomatoes, and cilantro. Serve with sour cream on the side.
