    Prepare the eggs

    Place the eggs in a pot and cover them with water. Bring to a boil and let simmer for 6-7 minutes for soft-boiled eggs. Once done, remove from heat, cool in ice water, and peel.

    Prepare the sausage mix

    In a bowl, mix the sausage meat with salt, pepper, and any herbs you desire.

    Wrap the eggs

    Take a portion of the sausage mixture and flatten it in your hand. Place a peeled egg in the center and carefully wrap the sausage around the egg, ensuring it is completely covered.

    Coat the eggs

    Dredge each sausage-wrapped egg in flour, dip in beaten egg, and then roll in breadcrumbs until fully coated.

    Fry the Scotch eggs

    In a deep pan, heat oil to 180°C (350°F). Fry the coated eggs in batches until golden brown, about 5-6 minutes. Remove and drain on paper towels.

    Serve

    Slice the Scotch eggs in half and serve warm with mustard on the side.
