    Prepare the Honey Dijon Aioli

    In a small bowl, mix together the honey Dijon mustard and mayonnaise until well combined. Set aside.

    Prepare the Corned Beef

    In a pot, braise the corned beef with Guinness beer on medium-low heat for about 2 hours or until tender. Shred the beef once cooked.

    Assemble the Reuben Sandwich

    Spread a generous amount of the honey Dijon aioli on one side of each slice of marble rye bread.

    Layer the Ingredients

    On two slices of bread (aioli side facing up), layer the shredded Guinness braised corned beef, followed by the sauerkraut, and top with Swiss cheese slices.

    Top and Grill

    Place the remaining slices of bread on top (aioli side down). Heat a skillet over medium heat, melt butter, and grill the sandwiches for about 4-5 minutes on each side until golden brown and the cheese is melted.

    Serve

    Remove from the skillet, slice in half, and serve immediately with extra sauerkraut or aioli on the side if desired.
