    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water for about 10-15 minutes or until tender. Drain and set aside.

    Cook the Corned Beef

    In a skillet over medium heat, add the corned beef and cook until heated through and slightly crispy, about 5-7 minutes. Remove from skillet and set aside.

    Scramble the Eggs

    In the same skillet, melt 1 tablespoon of butter. Crack the eggs into a bowl, add salt and pepper, and whisk until combined. Pour the eggs into the skillet and scramble until cooked to your liking. Remove from skillet.

    Combine Ingredients

    In a large bowl, mix together the cooked potatoes, corned beef, scrambled eggs, and cheddar cheese. Add chopped chives and mix well.

    Assemble the Burritos

    Lay out the tortilla wraps and spoon the filling into the center. Fold in the sides and roll tightly to form a burrito. Repeat with remaining tortillas.

    Toast the Burritos

    In the same skillet, melt the remaining tablespoon of butter over medium heat. Place the burritos seam side down and toast for about 2-3 minutes per side, until golden brown.

    Slice the burritos in half and serve warm with additional chives on top if desired.
