Cook the Wedge Fries

Preheat your oven to 425°F (220°C). Spread the wedge fries on a baking sheet and bake for 25-30 minutes or until crispy, turning halfway through.

Prepare the Beer-Braised Corned Beef

In a large skillet, melt the butter over medium heat. Add the corned beef and cook until browned. Pour in the beer, cover, and simmer for 20 minutes, allowing the flavors to meld.

Make the Irish Cheddar Sauce

In a saucepan, melt the remaining butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk, cooking until thickened. Remove from heat and stir in the Irish Cheddar, salt, and pepper until smooth.

Prepare the Toppings

Cook the bacon until crispy and crumble it. Slice the jalapenos and halve the heirloom grape tomatoes. Chop the cilantro.

Assemble the Irish Poutine

On a serving platter, layer the crispy wedge fries. Top with the beer-braised corned beef, drizzle with Irish cheddar sauce, and add dollops of sour cream. Finish with bacon, jalapenos, tomatoes, and cilantro.
