Cook the Pasta

In a large pot, bring salted water to a boil. Add elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt butter over medium heat. Whisk in flour and cook for about 1 minute until lightly golden. Gradually whisk in milk, stirring constantly until the mixture thickens.

Add Cheddar

Reduce heat to low, and add sharp cheddar and Irish cheddar cheese to the sauce. Stir until melted and smooth. Season with salt, pepper, and paprika.

Combine Pasta and Sauce

Add the cooked pasta to the cheese sauce and mix until the pasta is well-coated.

Add Optional Ingredients

If using bacon, chicken, corned beef, or vegetables, fold them into the macaroni and cheese mixture at this point.

Bake (optional)

For a baked version, preheat the oven to 350°F (175°C). Transfer the mixture to a greased baking dish. Top with breadcrumbs if desired, and bake for 20-25 minutes until bubbly and golden.
