Prepare the Onions

Slice the onions and sauté them in olive oil over medium heat until they are soft and caramelized, about 10-15 minutes. Add Jameson Whiskey, salt, black pepper, and thyme, and cook for another 5 minutes until the liquid reduces.

Prepare the Roast Beef

In a separate pan, heat the roast beef until warmed through. Season with garlic powder, salt, and black pepper.

Assemble the Sandwich

Slice the French rolls in half and layer the roast beef on the bottom half. Top with caramelized whiskey onions and a slice of Provolone cheese.

Melt the Cheese

Place the assembled sandwiches under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Prepare the Au Jus

In a saucepan, combine beef broth and any remaining whiskey from the onions. Heat until simmering.

Serve

Serve the sandwiches hot with the whiskey au jus on the side for dipping.
