Corned Beef Preparation

Prepare the Brisket

Rinse the beef brisket under cold water and pat it dry with paper towels. Trim any excess fat from the brisket.

Sauté Aromatics

In a large pot or Dutch oven, heat a little oil over medium heat. Add chopped onion, carrots, and celery, and sauté until softened, about 5 minutes.

Add Ingredients

Add the garlic, bay leaves, black peppercorns, whole cloves, mustard seeds, and salt to the pot. Stir to combine.

Braise the Brisket

Place the brisket into the pot, then pour in the Guinness and beef broth until the brisket is mostly submerged. Bring to a simmer.

Slow Cook

Cover the pot and reduce the heat to low. Allow the brisket to slow braise for about 3 to 4 hours, or until the meat is tender and easily shreds with a fork.

Rest and Slice

Once done, remove the brisket from the pot and let it rest for 15 minutes before slicing against the grain.
