Make the Biscuits

Preheat the oven to 450°F (230°C). In a large bowl, mix flour, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in milk until just combined. Turn dough onto a floured surface and knead gently. Roll out to 1 inch thickness and cut with a biscuit cutter. Place biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.

Prepare the Gravy

In a skillet over medium heat, cook the sausage until browned. Sprinkle flour over the sausage and stir well. Gradually add milk, stirring continuously until the mixture thickens. Season with salt and black pepper.

Serve

Split the biscuits in half, place them on a plate, and ladle the warm sausage gravy over the top. Optionally, add a fried or poached egg and crispy bacon if desired.
