Mix the Cheese Filling
In a bowl, combine ricotta cheese, mozzarella cheese (reserve 1 cup for topping), Parmesan cheese, egg, Italian seasoning, salt, and black pepper. Mix until well combined.

Prepare the Lasagna Noodles
Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean surface to prevent sticking.

Assemble the Lasagna
In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles over the sauce. Spread half of the cheese mixture over the noodles, followed by half of the sautéed vegetables. Add another layer of marinara sauce over the vegetables.

Repeat the Layers
Add another layer of 3 lasagna noodles, followed by the remaining cheese mixture, the remaining vegetables, and another layer of marinara sauce. Top with the final 3 lasagna noodles and cover with the remaining marinara sauce. Sprinkle the reserved mozzarella cheese on top.

Bake the Lasagna
Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Remove the foil and bake for another 15-20 minutes until the cheese is melted and bubbly. Let it cool for 10 minutes before serving.
