Roasted Veggies

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare the Vegetables

    Slice zucchini and bell peppers into thin strips. Chop the mushrooms. In a large bowl, combine the chopped veggies, olive oil, salt, black pepper, oregano, and basil. Toss to coat.

    Roast the Vegetables

    Spread the vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until tender and slightly browned. Remove from oven and set aside.

Lasagna Assembly

    Cook the Lasagna Noodles

    Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Mix the Ricotta Filling

    In a bowl, mix ricotta cheese with a pinch of salt and black pepper. Set aside.

    Layer the Lasagna

    In a baking dish, spread a thin layer of roasted vegetables. Place 3 noodles on top, followed by half of the ricotta mixture, a layer of spinach, and a third of the mozzarella cheese. Repeat the layering process and finish with a final layer of roasted vegetables, noodles, and remaining mozzarella and Parmesan cheese on top.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Garlic Butter Preparation

    Prepare Garlic Butter

    In a small saucepan, melt the butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in chopped parsley and set aside.
