Vegetable Filling Preparation

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.

    Add Remaining Vegetables

    Stir in the grated carrot, diced zucchini, and diced bell pepper. Cook for another 5-7 minutes until the vegetables are softened.

    Incorporate Spinach

    Add the chopped spinach, salt, black pepper, and Italian seasoning. Cook until the spinach is wilted, about 3 minutes. Remove from heat and set aside.

Cheese Mixture Preparation

    Combine Ingredients

    In a mixing bowl, combine the ricotta cheese, shredded mozzarella cheese (reserve 1 cup for topping), grated Parmesan cheese, egg, and salt. Mix until well combined.

    Preheat your oven to 375°F (190°C).

    Layer the Ingredients

    Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place 4 lasagna noodles over the sauce. Spread half of the vegetable filling over the noodles, followed by half of the cheese mixture. Repeat the layers with another 4 noodles, remaining vegetable filling, and cheese mixture.

    Top with the last 4 lasagna noodles, remaining marinara sauce, and sprinkle with the reserved mozzarella cheese.

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
