Poaching the Salmon

    Prepare the Herb Garlic Butter

    In a small saucepan, melt the unsalted butter over low heat. Add minced garlic, thyme, and parsley. Stir together and let it cook for 2-3 minutes until fragrant.

    Poach the Salmon

    In a shallow pan, place the salmon fillet and pour the herb garlic butter over it. Add a splash of lemon juice, and season with salt and black pepper. Cover the pan and poach on low heat for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Salad

    Prepare the Salad Base

    In a large bowl, combine the mixed salad greens, halved cherry tomatoes, and trimmed green beans.

    Make the Dressing

    In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and black pepper until well combined.

    Combine Salad and Dressing

    Drizzle the dressing over the salad mixture and toss gently to combine.

    Top the salad with quartered hard-boiled eggs and black olives.

Assembly

    On a serving plate, place a generous portion of the salad and top with the poached salmon. Drizzle any remaining herb garlic butter over the salmon for added flavor.
