Dough Preparation
- 1
Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes, until it becomes frothy.
- 2
Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Mix well.
- 3
Combine Ingredients
Once the yeast mixture is frothy, add it along with olive oil to the flour mixture. Stir until it forms a dough.
- 4
Knead Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until it’s smooth and elastic.
- 5
Let Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until it doubles in size.
Pizza Assembly
- 6
Preheat the Oven
Preheat your brick oven to a very high temperature, around 475°F to 500°F (245°C to 260°C).
- 7
Prepare Pizza Base
After the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a round pizza base on a floured surface.
- 8
Add Sauce
Spread 0.5 cups of tomato sauce evenly over each pizza base, leaving a small border around the edges.
- 9
Add Cheese and Toppings
Sprinkle 1 cup of fresh mozzarella cheese over the sauce on each pizza. Add fresh basil leaves, grated Parmesan cheese, and Italian seasoning on top.
- 10
Drizzle Olive Oil
Drizzle 0.5 tablespoons of olive oil over each pizza for added flavor.
- 11
Bake the Pizza
Carefully place the pizzas in the hot brick oven and bake for 10-15 minutes, or until the crust is golden and cheese is bubbly.
