Salad Preparation

Prepare the Vegetables
Wash the cucumber, cherry tomatoes, and bell pepper under cold water. Peel the cucumber if desired and cut it into bite-sized pieces. Halve the cherry tomatoes. Slice the red onion thinly. Remove the stem and seeds from the bell pepper, then cut it into bite-sized pieces.

Combine the Salad Ingredients
In a large bowl, combine the chopped cucumber, halved cherry tomatoes, sliced red onion, and bell pepper pieces. Add the Kalamata olives and crumbled feta cheese to the bowl.

Add Fresh Parsley
Roughly chop the fresh parsley and sprinkle it over the salad mixture.
Vinaigrette Preparation

Mix the Vinaigrette
In a small bowl or jar, combine the extra virgin olive oil, fresh lemon juice, Dijon mustard, honey, and minced garlic. Whisk or shake until well combined.

Season the Vinaigrette
Taste the vinaigrette and season it with salt and black pepper to your liking. Adjust any ingredients as necessary.
Assembly

Dress the Salad
Pour the prepared vinaigrette over the salad ingredients in the large bowl. Toss gently to coat all the ingredients evenly with the dressing.

Serve
Transfer the Greek salad to serving plates or bowls and enjoy immediately or chill in the refrigerator for 15 minutes before serving for a refreshing taste.
