Hummus Preparation

Blend the Ingredients
In a food processor, combine the canned chickpeas, tahini, garlic cloves, lemon juice, olive oil, ground cumin, salt, and water. Blend until smooth and creamy, adding more water if needed to reach desired consistency.

Activate the Yeast
In a mixing bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until it becomes frothy.

Mix the Dough
Add all-purpose flour, olive oil, and salt to the yeast mixture. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead it for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Flatbreads
Once risen, punch down the dough and divide it into 6 equal portions. Roll each portion into a flat disc.

Grill the Flatbreads
Preheat a grill or grill pan over medium-high heat. Grill each flatbread for about 2-3 minutes on each side, or until grill marks appear and the bread is cooked through.
Assembly and Serving

Prepare the Toppings
While the flatbreads are grilling, chop the cherry tomatoes and cucumbers into bite-sized pieces. Slice the Kalamata olives if desired.

Serve
Spread the hummus on a serving platter. Arrange the grilled flatbreads around the hummus. Top with chopped tomatoes, cucumbers, olives, and sprinkle with fresh parsley if using.
