Mix the Filling Ingredients
In a mixing bowl, combine cream cheese, sour cream, shredded cheddar cheese, chopped green onions, diced tomatoes, chopped cilantro, chili powder, and cumin. Mix until well combined and creamy.

Scoop and Fill
Once the potatoes are baked and cool enough to handle, slice them in half lengthwise. Scoop out the inside of each potato half, leaving a thin layer of potato to maintain structure. Add the scooped potato to the filling mixture and stir until well combined.

Stuff the Potatoes
Spoon the filling mixture back into the potato skins, heaping it generously.

Top with Cheese
Sprinkle additional shredded cheddar cheese on top of the filled potatoes. Place them back on a baking sheet.

Bake Again
Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Serving

Garnish and Serve
Remove the potatoes from the oven. Top with a dollop of sour cream and sliced jalapeños. Serve hot and enjoy your Fiesta Potatoes!
