Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until well combined and the mixture resembles wet sand.

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup or your fingers to ensure it is packed tightly.

Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow it to cool while preparing the filling.

In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined.

Add the sour cream and vanilla extract to the cream cheese mixture. Beat on low speed until just incorporated.
