Method

Preparation

  1. 1

    Slice the Vegetables

Thinly slice the onion, green bell pepper, and mushrooms. Set aside.

  2. 2

    Prepare the Steak

Slice the ribeye steak into thin strips against the grain. This will ensure tenderness when cooked.

Cooking

  1. 3

    Cook the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion, bell pepper, and mushrooms. Sauté until soft, about 5-7 minutes. Season with salt and black pepper. Remove from skillet and set aside.

  2. 4

    Cook the Steak

In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak and cook for about 3-5 minutes, or until browned and cooked to your desired doneness. Return the sautéed vegetables to the skillet and mix well.

  3. 5

    Melt the Cheese

Reduce the heat to low. Layer the Cooper cheese over the steak and vegetable mixture in the skillet. Cover the skillet with a lid and let it sit for 2-3 minutes until the cheese melts.

Assembly

  1. 6

    Assemble the Sandwich

Slice the hoagie rolls open lengthwise. Spoon the steak and cheese mixture into each roll. Serve immediately.
