Marinate the Chicken
In a mixing bowl, combine the buttermilk and hot sauce. Add the boneless chicken thighs, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour, or overnight for better flavor.
Prepare the Breading
In a separate bowl, combine the all-purpose flour, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well until all dry ingredients are fully incorporated.
Heat the Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the batter into it; if it sizzles, it's ready.
Bread the Chicken
Remove the marinated chicken thighs from the buttermilk mixture and allow excess to drip off. Dredge each piece of chicken in the flour mixture, ensuring it is fully coated. Shake off any excess flour.
Fry the Chicken
Carefully place the breaded chicken thighs into the hot oil. Fry for about 6-8 minutes on each side, until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (74°C). Remove and drain on paper towels.
Assemble the Sandwich
Cut the seeded burger rolls in half. Place a fried chicken thigh on the bottom half of each roll, add a lettuce leaf, a slice of tomato, and top with the other half of the roll. Optionally, add extra hot sauce for more spice.
