Prepare the Ingredients

Thinly slice the ribeye steak against the grain into strips. Slice the onion and bell pepper into thin strips.

Cook the Vegetables

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onion and bell pepper, and cook until they are soft and lightly caramelized, about 5-7 minutes. Remove the vegetables from the skillet and set them aside.

Cook the Steak

In the same skillet, add the sliced ribeye steak. Season with salt and black pepper to taste. Cook the steak for about 3-5 minutes, stirring frequently, until it is browned and cooked to your desired doneness.

Combine Ingredients

Once the steak is cooked, return the sautéed onion and bell pepper to the skillet. Stir to combine and heat through for an additional 1-2 minutes.

Place the slices of provolone cheese on top of the steak and vegetable mixture. Cover the skillet with a lid and let it cook for another 1-2 minutes until the cheese melts.

Cut the hoagie rolls lengthwise, leaving one side intact to create a pocket. Spoon the cheesesteak mixture into each roll, ensuring equal amounts of meat, vegetables, and melted cheese.
