Cook the Chicken
In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the pot and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the pot and set aside to cool slightly, then chop into bite-sized pieces.

Sauté the Vegetables
In the same pot, add the remaining tablespoon of olive oil. Add the minced garlic, diced carrots, bell pepper, and zucchini. Sauté the vegetables for about 5-7 minutes until they are tender.

Add Chicken Broth and Orzo
Pour in the chicken broth and bring to a boil. Once boiling, add the orzo pasta and dried oregano. Stir to combine.

Cook the Orzo
Reduce the heat to a simmer and cover the pot. Cook for about 10-12 minutes or until the orzo is al dente, stirring occasionally.

Add Peas and Finish
In the last 2 minutes of cooking, add the frozen peas and chopped chicken back to the pot. Stir well to combine and heat through.

Serve
Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning with additional salt and pepper to taste. Serve hot.
