Prepare the Fruit
If using whole fruits, wash, peel, and chop them into smaller pieces. For citrus fruits, juice them and set aside.

Make the Syrup
In a saucepan, combine water and granulated sugar over medium heat. Stir until the sugar dissolves completely, then remove from heat and let cool.

Blend the Ingredients
In a blender, combine the prepared fruit, cooled syrup, and lemon juice. Blend until smooth and well combined.

Chill the Mixture
Transfer the blended mixture to a bowl and refrigerate for at least 1 hour to chill completely.

Freeze the Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a sorbet consistency. Alternatively, pour into a shallow dish and freeze for 4-6 hours, stirring every 30 minutes to break up ice crystals.

Once the sorbet is frozen and has a smooth texture, scoop into bowls and garnish with fresh mint leaves if desired. Serve immediately.
