Making the Gelato

    Prepare the Gelato Base

    In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, honey, vanilla extract, and a pinch of salt. Heat over medium heat, stirring occasionally until the sugar is fully dissolved. Do not let it boil.

    Chill the Mixture

    Remove the saucepan from heat and let the mixture cool to room temperature. Once cooled, cover and refrigerate for at least 2 hours or until completely chilled.

    Churn the Gelato

    Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Add Pistachios

    During the last few minutes of churning, add in the crushed Sicilian pistachios to the gelato base.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
