Cooking Instructions

  1. 1

    Prepare the Broccoli Rabe

Trim the ends off the broccoli rabe and wash it thoroughly under cold water. Cut into smaller pieces if desired.

  2. 2

    Blanch the Broccoli Rabe

Bring a large pot of salted water to a boil. Add the broccoli rabe and blanch for about 2-3 minutes until bright green. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

  3. 3

    Cook the Aromatics

In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until garlic is fragrant but not browned, about 1 minute.

  4. 4

    Add Anchovies

Add the anchovy fillets to the skillet and cook, stirring, until they dissolve into the oil, about 2 minutes.

  5. 5

    Combine and Serve

Add the blanched broccoli rabe to the skillet, tossing to coat in the anchovy-garlic oil. Cook for an additional 2-3 minutes. Season with salt and black pepper to taste. Remove from heat and sprinkle with grated Pecorino Romano cheese before serving.
