Prepare the Steak
Season both sides of the New York strip steaks with salt and freshly ground black pepper. Press the pepper into the meat to coat well.

Sear the Steaks
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. When hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest on a plate.

Make the Sauce
In the same skillet, reduce heat to medium and add the shallots. Sauté for about 1-2 minutes until translucent. Add the green peppercorns and cognac, and carefully ignite the cognac to flambé (optional). Allow the flames to die down.

Finish the Sauce
Stir in the heavy cream and cook for another 2-3 minutes until the sauce thickens slightly. Stir in the remaining tablespoon of butter for added richness and adjust seasoning with salt and pepper as needed.

Serve
Slice the rested steaks and serve them with the green peppercorn sauce drizzled over the top.
