Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Drain well. Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker instructions. Once cooked, let it sit covered for 10 minutes.
Marinate the Spam
In a small bowl, combine pineapple juice, soy sauce, brown sugar, and sesame oil. Slice the Spam into 8 rectangular pieces. Marinate the Spam pieces in the mixture for at least 30 minutes.
Cook the Spam
In a skillet over medium heat, cook the marinated Spam pieces for about 2-3 minutes on each side, or until they are golden brown and caramelized. Remove from heat and let cool slightly.
Form the Musubi
Place a sheet of plastic wrap on a flat surface. Wet your hands to prevent sticking. Take a handful of sushi rice and shape it into a rectangle. Place one piece of cooked Spam on top and press gently. Wrap the rice and Spam with a nori sheet, folding the edges over. Use the plastic wrap to shape and hold the musubi together. Repeat for the remaining ingredients.
Prepare the Ponzu Glaze
In a small bowl, combine citrus juice and soy sauce. This will serve as a glaze to drizzle over the musubi.
Serve
Slice the musubi in half, drizzle with the citrus ponzu glaze, and serve immediately or pack for later.
