Cook the Steak

In a skillet over medium-high heat, heat the olive oil. Season the ribeye steak with salt and black pepper. Cook the steak for about 4-5 minutes on each side until it reaches your desired doneness. Remove from skillet and let it rest for a few minutes before slicing it thinly.

Sauté Vegetables

In the same skillet, add the sliced onions and green bell pepper. Sauté for about 5-7 minutes until they are soft and caramelized.

Combine Filling

In a large bowl, combine the sliced steak, sautéed onions and peppers, and shredded provolone cheese. Mix well to combine.

Assemble Egg Rolls

Place an egg roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the top corner with a bit of water.

Fry the Egg Rolls

In a deep pan or fryer, heat oil to 350°F (175°C). Fry the egg rolls in batches for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve hot with your favorite dipping sauce.
