    Prepare the Filet Mignon

    Preheat your oven to 400°F (200°C). Season the filet mignon pieces with salt and black pepper on both sides.

    Wrap with Bacon

    Wrap each filet mignon with 2 slices of bacon, securing them with toothpicks if necessary.

    Sear the Steaks

    In an oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the wrapped filet mignon and sear for about 3-4 minutes on each side until the bacon is crispy.

    Caramelize the Shallots

    Remove the filets from the skillet and set aside. In the same skillet, add sliced shallots and cook for about 2-3 minutes until they start to caramelize. Add the butter and fresh thyme, stirring to combine.

    Finish in the Oven

    Return the filets to the skillet with shallots and transfer the skillet to the preheated oven. Roast for about 6-8 minutes for medium-rare, or until your desired doneness is reached.

    Rest and Serve

    Remove from the oven, let the filets rest for 5 minutes, then serve with the caramelized shallots on top.
