Preparation and Cooking

    Prepare the Wedge Fries

    Preheat your oven to 425°F (220°C). Cut each russet potato into wedges and toss them with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer and roast for about 30-35 minutes or until golden and crispy, flipping halfway through.

    Cook the Steak

    Heat a large cast-iron skillet over medium-high heat. Season the New York strip steaks with salt and black pepper. Add olive oil to the skillet. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

    Sauté the Spinach

    In the same skillet, add a bit more olive oil if needed, and sauté the fresh spinach until wilted, about 2-3 minutes. Season with salt and pepper to taste.

    Grill the Mushrooms

    Add sliced crimini mushrooms to the skillet and sauté until golden brown and tender, about 5-7 minutes. Season with salt and pepper.

    Make the Shallot-Herb Butter

    In a small bowl, combine finely chopped shallots, fresh herbs, and softened unsalted butter. Mix well, and season with salt to taste.

    Serve

    Plate the steak alongside the wedge fries, sautéed spinach, and grilled mushrooms. Top the steak with a generous dollop of shallot-herb butter.
