    Prepare the Tomatoes

    Slice the green tomatoes into 1/4-inch thick slices. Sprinkle both sides with salt and let them sit for about 15 minutes to draw out excess moisture.

    Set Up Breading Station

    In one shallow bowl, place the flour. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine the cornmeal, black pepper, and additional salt.

    Bread the Tomatoes

    Dredge each tomato slice in flour, dip in the egg mixture, and then coat with the cornmeal mixture. Ensure each slice is well coated.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

    Fry the Tomatoes

    Carefully add the breaded tomato slices to the hot oil in batches. Fry for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

    Serve the fried green tomatoes warm, topped with pimento cheese, a drizzle of hot pepper jelly, and a side of sweet corn relish.
