    Prepare the Ingredients

    Chop the onion, carrot, celery, and garlic. Rinse the field peas and set them aside.

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the onion, carrot, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.

    Add Ham Hock and Broth

    Add the ham hock to the pot and pour in the chicken broth. Bring to a boil.

    Cook the Soup

    Add the field peas, salt, and black pepper to the pot. Reduce heat and let it simmer for 30-40 minutes until the peas are tender.

    Add Mustard Greens

    Stir in the mustard greens and cook for an additional 5 minutes until they are wilted.

    Serve

    Remove the ham hock, shred the meat, and return it to the soup. Adjust seasoning if necessary and serve hot.
