Brisket Preparation

Prepare the Rub
In a bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, ground black pepper, and salt to create a spice rub.

Season the Brisket
Rub the spice mixture generously over the brisket, ensuring it is evenly coated. Let it sit for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Smoker
Soak applewood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C) and set up for indirect cooking.

Smoke the Brisket
Place the brisket on the smoker and add the soaked applewood chips to the smoker box. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).
