    Prepare the Beef

    Trim the beef tenderloin of any excess fat and slice it into 1-inch thick medallions.

    Season the Medallions

    Rub the medallions with olive oil, salt, black pepper, and fresh rosemary. Let them marinate for at least 30 minutes at room temperature.

    Sear the Medallions

    Heat a skillet over medium-high heat. Add a little olive oil and sear the medallions for about 4-5 minutes on each side for medium-rare, adjusting the time based on your desired doneness.

    Remove the medallions from the skillet and let them rest for 5 minutes before serving.
