Peel the onions and slice them into 1/2 inch thick rings. Separate the rings and set them aside.

Make the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In another bowl, combine the buttermilk and egg. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Coat the Onion Rings
Dip each onion ring into the batter, ensuring it is fully coated, then transfer to a plate.

Bread the Rings
Dredge the coated onion rings in panko breadcrumbs, pressing gently to adhere the breadcrumbs.

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Carefully add the breaded onion rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
