Preparation Steps
Prepare the Walleye
Season the walleye fillets with salt and pepper. Dredge each fillet in flour, dip in beaten eggs, and coat with breadcrumbs.
Fry the Fish
In a large skillet, heat olive oil over medium-high heat. Fry the breaded walleye fillets for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Blanch the Green Beans
In a pot of boiling salted water, blanch the green beans for about 3-4 minutes until tender-crisp. Drain and set aside.
Prepare the Salad
In a bowl, combine the blanched green beans, halved cherry tomatoes, and pitted Castelvetrano olives. Drizzle with olive oil and season with salt and pepper to taste.
Serve
On a plate, arrange the fried walleye alongside the grilled zucchini and the green bean salad. Serve with a generous dollop of salsa rosa on the side.
